Confetti Quinoa

I’ll get back to posting food stuffs with recipes as soon as I can! With little time, I wanted to combine eating and testing. This was pretty and tasty. I wish I had a food processor though! (Ok, maybe I don’t. If I really wanted one, I’d have one.) Here’s recipe #3 that I tested from Urban Vegan’s upcoming cookbook.

This was my first? time making quinoa. Maybe second. The box said pre-rinsed so I trusted it but I guess if you don’t rinse it, then it tastes bitter. I didn’t have that problem. Quinoa. What a cool word.

  1. Vegetarian seems hard enough. Why vegan, as well?
