Flog it good!

Magazines I got on the scale this morning. It was disappointed in me again. 4 pounds up since Thanksgiving.

It’s possible to gain weight as a vegan or vegetarian. I’ve proven to my mother that just cause something’s vegan doesn’t mean it’s automatically healthier.

I can pile on Earth Balance — which is amazingly butter-like — on my vegetables and be 100% vegan. I can eat a triple cheese pizza and be lacto-ovo vegetarian. With all the recipe testing and “Oh this looks good” type of cooking, maybe it’s time to step back — counts as exercise, right? — and start food blogging again. I love reading others’ “what I ate today” posts cause I can get some ideas — or feel better about that huge bowl of vegan bread pudding. I am interested in the new program at Weight Watchers but have no time in a few weeks since school starts back up.

We’ll see. I don’t like those 4 pounds. I have more to lose but was taking a break by maintaining for a bit. Meh.

I put a cup of oatmeal in a glass bowl the night before and added 1.5 cups water to it. Covered with plastic and took it in the next morning. Nuked it for 2 minutes. Wasn’t enough. I should try it with more water and longer cooking time. I wanted to get some good stuff from the cafeteria so badly. But at least I brought it in!

Lunch made me think of a Bento box. Recently, I ordered a laptop lunch after eyeballing it for a long time, ever since I bought Vegan Lunch Box. Can’t wait for it to come in so I can try this comboing stuff again. Course, if I don’t even have time to make oatmeal ahead, what are my chances of packing my lunch in a cute Bento-like box? Hey, I’m an optimist!

I need better 3:00 snacks. I have tried the Vitatops before and they were good. Guess I should try those again, eh? Also, only two more days left that I can fulfill my goal this week of bringing lunch from home one day a week.

Those hot cocoas are killing me. Do I throw the canister away and get sugar-free/fat-free version or finish off the canister?

*Recipes:

Tomato Soup was made on the fly with 1 giagando can of crushed tomatoes, 1 small can of tomato sauce, 3 teaspoons minced garlic, liberal sprinkling of Mrs Dash Garlic, lotsa sprinkles of dried parsley and oregano, and 2 teaspoons of brown sugar to take the edge off. I then did a dash of ground nutmeg. Added quite a few turns of the pepper grinder. For presentation, added another sprinkle of parsley flakes.

Salmon, Lima Beans and Corn So. Yeah. Last night I joined Weight Watchers on a whim. At the end of the meeting, I stayed for the newbie meeting. The leader asked each of us which plan we were going to do. Most said Core because “I don’t have to measure or track.” That’s what I was thinking but after I heard it for the fourth time, I thought, “Wait. Isn’t that what got me in this mess?”

I’m not 100% on plan but getting there. As seen before, I need to plan better! Ha! Plan to be on plan. Nice.

Breakfast: 2
Oatmeal, 2 packets Splenda and some cinnamon: 2
Multi-Vitamin: 0
Diet Mountain Dew, 1 can: 0

Lunch: 14.5
Minestrone, 16 oz.: 4.5

Thoughts: Ok, I see why I get hungry. Fine fine fine. Damn KitKats. Oh and the Schwan’s Salmon is out of this world! Expensive, but amazing. That was my last fillet. The vegetables at dinner were from frozen. I cooked it on the stovetop. GASP! Yes. Got lots of frozen vegetables at Food Lion that figured out to be $1/pound. Good times.

Notes: I put a little stool under the window in the dining room. It’s the only room this time of day that has any light. I put my place mat and plate on top. Ta da! Outside light without me holding the edge of the plate precariously.

Tonight I will finish studying, take my quiz, read the case we’re working on in the other class, and fix some oatmeal. Sounds like a … plan! Woot 🙂
