Laptop Lunch #3

Yes. I’ve been buried under a lot of homework and it kept me from putting up my foodstuffs. But I have been eating. 😉 And taking pictures!

Clockwise starting top left: Fat-free cottage cheese with a strawberry. I had some frozen strawberries from a sale and put it in there. The lid would go on so I fished it out and cut it in half. Since I pack my lunches the night before, the strawberry had time to thaw in the fridge and left its goodness all over the place. Black olives. I wish I had a food pick but fork worked fine. Papaya was very hard to cut. I should have looked up how to cut one but thought it’d be like an avocado. Not sure if it didn’t work out because it was overripe? No idea. I do know now that I don’t like papaya much. But I tried it. The pink container has a pile of frozen mixed vegetables. Again, it had time to thaw out till lunch. Wasn’t bad microwaved for a minute. Already had a spritz or three of ICBINB spray. Pretty tasty. I don’t use a lot of salt and these didn’t have any.

Laptop Lunch #2

Leftover homemade chicken fried rice (brown rice), cherries, grapes, carrots, celery and Laughing Cow light wedge. Tried to be mostly WW Core but the cheese isn’t.

Didn’t finish the carrots. Not a fan.

In case you’re curious how I transport my laptop lunch, here it is. Some use the insulated bag that they sell, and some just use any sort of bag. I use this crocheted recycled plastic bag bag that I got in a “worst present” exchange. I got the better deal out of all the people.

The bottom expands to hold the box in a horizontal state and keeps it snug so it doesn’t move.

Do I include the laptop lunch as part of my food journal or do I do it on its own? Not sure so I’ll try on its own for now so that I can find them more easily (and in case other folks are looking for them too). But I’ll have a picture on the food journal too.

It came. I was so excited to use it that I didn’t even wait for a full dishwasher load. I washed it by hand! Come on. That says a lot.

I had no idea what I was going to put in it. I had Oven fried chicken but there’s no way the pieces would fit. I could take the meat off but the leftovers are too fresh to do that! I had not planned so just went through the fridge.

I made it completely the night before and here it is ready for work the next morning.

And here it is open but with the tops on. I always wonder how people do the tops so I took a picture of how I did them. I followed the directions and put the lidded container in the back and had the tab pointing toward the middle.

Large containers are 1 cup. Smaller are 1/2 cup. The dip container is 1/8 cup.

1 cup salad greens: 0.
1 cup Amy’s Vegetable Barley soup: 1.
2 Laughing Cow, light, wedges: 2.
1/16 cup (1 Tablespoon) Light Greek dressing: .5.
1 White House Natural Plus applesauce cup: 1.
1 Sugar-free Jello: 0.
The Special K protein bar on the utensils was included cause it fit but wasn’t eaten.

It came in a plastic resealable bag. I was surprised that there are ridges on the bottom shaped like the containers. It’ll make it easier to pack, I’m sure, but sometimes I see people fill half the container with something. Maybe it was a different container. I’ll have to find the photos again. The utensils are neat but kinda young. Actually, the whole thing has a “young” look. I picked “Whimsical” for the colors. Next time I may get the black and red one. Or maybe give Mr. Bento a whirl?

Friday: Soft taco, spicy cauliflower and sly fruit salad

Got some exercise today in the form of Meals on Wheels. Jumping in and out of the car and running around during the heat of mid-day has to count for something!

Brought my lunch. Yay! Accomplished that part of June’s goal. Next week, let’s get the other part done! Didn’t do my water well at all. Needed caffeine a lot to battle the tiredededs. I stopped by Farm Fresh on the way home to pick up some Vitamuffins but they don’t carry them. The Vitamuffin site lies! Bah.

Tonight was a rush. I had my headset on as I ate while waiting for my online class group members to arrive in the chatroom. It went long but I am glad we ended in time for BSG 🙂

Rant: Organic apples with stickers

Organic produce display at Food Lion. They have stickered apples in plastic wrapped trays!

I bought organic apples, strawberries and kiwis last night. I grabbed an apple this morning. In order to grab an apple, I had to open the plastic wrapped tray of three apples. I pulled one out and put it in my lunch. Then at lunch, I discovered two stickers on the apple saying, “Hey, I’m organic.” I took off the sticker and it left all this goop behind.

What the frog! Why? Why! First, wasteful packaging to gather up three in the first place. Then, to add insult to injury, they put on a sticker that is about impossible to get its residue off?
